Orange and Macadamia Cake (Gluten Free, Dairy Free)

Everything happens for a reason. From huge life changing events to something as simple as an oil change. I feel fortunate enough to have experienced things in my life that have shown me to go with the flow and not to stress…as much as that grinds my gears in the wrong way sometimes. It always works out for the best in the end and I end up laughing at how stressed I get when things don’t go to plan from the start.

I was shown this again the other day when I went to my mates’ to get a ‘quick’ oil change. I’m currently travelling up the east coast of Australia, living in a 4WD, stopping at friends places along the way and thoroughly enjoying myself. I’m looking for some direction with my blog, haven’t found it yet but as I said, I’m just going to go with the flow and see what comes to me. At the moment I’m pretty keen to work with the produce that is at hand, from local fish shops, road side grocers, etc. I need to keep it simple because we don’t have much room in the car for spices, sauces and all of the things I used to take for granted in my pantry. Stay tuned for some simple but delicious, bright, springtime meals!

So, back to the story. I went to get an oil change. It wasn’t working out…something to do with the thing that goes in the thing and blablabla… So, while I was waiting, I realised I was in the middle of a Macadamia Farm! So I grabbed my camera, started taking some pics of the macadamia sorting process and was then shown to the citrus trees; where we started climbing, picking, getting scratched and nearly falling, but collecting some lovely, juicy fruit.

I then had a great haul of fruit and nuts, about the same time as I was informed that the car was going to take another hour or so and I should probably just stay for the night. Oooooh, alright….let’s make a cake.

I could go into detail here about the people that I got to stay with, but I don’t think my words could do them the justice they deserve. What a family; so inspirational and beautiful. All I can say is, Thankyou.

2 oranges (or 3 small)

250 g caster sugar, plus extra to dust, plus 1/3 cup for syrup

6 eggs

1/4 cup Macadamia Oil

1tsp vanilla extract

220g macadamia meal (if you can’t buy it, just grind or blend them up)

2 tsp baking powder

1/2 cup coconut flour


Place the oranges in a saucepan with enough water to cover. Bring to the boil and simmer for 2 hours. Drain (reserve liquid), cool, cut in half, get the seeds out, process until smooth. set aside.

Pre-heat the oven to 160 degrees celcius. Grease a regular cake tin.

Beat the sugar and eggs until light and creamy. Add the oil and vanilla extract and beat until creamy again. Add the macadamia meal, sifted flour and baking powder and lightly fold it through until combined.

Spoon into the cake tin, smooth the top and sprinkle with extra sugar.

Bake for about 1-1 1/4hrs.

Meanwhile, place reserved liquid from oranges plus 1/3 cup caster sugar in a small saucepan, bring to the boil, reduce to a simmer, simmer for about 15 mins or until reduced and thicker. Set aside to cool.

Remove cake from the oven, allow to cool for 10 mins and spoon over syrup.

Enjoy with plain yoghurt or ice cream.
